Egg Tofu with mixed vegetables is one of Chinese Indonesian Cuisines that I love. In Indonesia, we call it Sapo Tahu. But I think, people here may know it as egg tofu or soft tofu with mixed vegetables. No matter what we call it, the taste of Sapo Tofu is delicious and can be your one of variety dishes today.


Egg tofu with mixed vegetables:

Ingredients and the cooking process of this delicious dish is just exactly same like Stir Fry Vegetables/Cap Cay Goreng However, for Sapo Tahu you use Japanese Egg Tofu, Shiitake Mushroom and more protein like chicken and shrimps and another seafood (Calamari/Squid or Mussels) if you like.
  • Carrot, Bokcoy or Yukoy or any Chinese "Green" Vegetables
  • Red Pepper
  • Japanese Silk Tofu, slice and fry
  • 5 Shiitake Mushrooms (wash thoroughly and slice)
  • Shrimps, slices of chicken, Calamari Squid
  • 3 cloves of Garlics, minced 
  • 3 tbsp of Oyster Sauce mix with 1 cup of water and 1 tsp Corn Flour or Maizena
  • Pepper and Salt
Egg Tofu
Ingredients
Stir fry minced Garlic with 1 tbsp of oil until you smell the aroma, put and cook the raw ingredients such as Shrimps, Chicken, Calamari and other raw ingredients and cook them well. Put vegetables, stir them evenly but not overcooked. Put Oyster Sauce.  As final frontier, put the Japanese Silk Tofu and Shiitake Mushroom.
