Stir-fry Chicken With Garlic Scapes

First time I ate Garlic Scapes was in Chinese Restaurant in Toronto.  It was delicious, especially when it is cooked with chicken or beef.  Garlic scapes is a plant stalk which grows from a bulb of Garlic. The young Garlic scapes is crunchy like Asparagus.
Basically, the Chicken in this menu is about the same like General Tao Chicken. However, we just add Garlic Scapes instead of Red Pepper like Tao's Chicken.


Stir-fry Chicken With Garlic Scapes:

  •  250 gr boneless chicken thigh, slice them into 1 cm cube, marinate for 1 hour with pinch of salt and pepper, 1 tsp sesame oil and 2 tbsp of soy sauce.
  •  After 1 hour, mix/cover the marinated chicken with corn flour and deep-fry the chicken in hot oil.  Make sure the Chicken is well cooked but do not over-cooked, otherwise the Chicken will be "hard" and not tender. Drain the oil and put them aside.
  • 5 long stalk of Garlic Scapes, cut them into 2 cm of stalks.

stir fry chicken:

  • 2 cloves of garlic, minced
  • 2 cm of ginger, sliced
  • sauce : 1.5 cup of water, mix with 1 tsp corn flour, 2 tbsp Oyster sauce,  1 tbsp of dark soy sauce and 2 tbsp of Xiaoxing cooking wine (optional).
Stir-fry Garlic and Ginger until you smell the aroma. Add Garlic Scapes and fry the scapes until well done. Add sauce until the sauce looks "thicker". Add the Fried Chicken.

Tips when cooking:
If you think the aroma is too strong (Garlic aroma), you can boil them first (medium well-done) before stir-frying them. Enjoy! :)
